Herb Butter Sirloin

Ingredients

For the steak

  • 1 top sirloin steak (1.5 inches thick, about 12 oz)
  • 2 tsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper

For the herb butter

  • 4 tbsp unsalted butter, softened
  • 1 garlic clove, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh chives, finely chopped
  • 1/2 tsp lemon zest
  • 1/4 tsp salt
  • Pinch of black pepper

Instructions

  1. Prepare the herb butter: Mix all herb butter ingredients in a small bowl. Shape into a log using plastic wrap and refrigerate until firm.
  2. Remove the steak from the refrigerator 30 minutes before grilling to bring it to room temperature.
  3. Preheat your grill to high heat (about 450-500°F or 232-260°C).
  4. Pat the steak dry with paper towels. Brush with olive oil and season with salt and pepper on both sides.
  5. Place the steak on the hot grill. Cook for 4-5 minutes on each side for medium doneness (140-145°F or 60-63°C internal temperature).
  6. For crosshatch grill marks, rotate the steak 45 degrees halfway through cooking on each side.
  7. Remove the steak from the grill and let it rest on a cutting board for 5 minutes.
  8. Slice the chilled herb butter into rounds.
  9. Slice the steak against the grain and top with rounds of herb butter.
  10. Serve immediately, allowing the herb butter to melt over the hot steak.
